Winter Soups

More winter warming soups, packed with nourishing bone broth, super vegetables that provide protein, fibre and carbohydrates. Perfect to help nurture growing bodies, muscle recovery and offer immunity for the cold winter ahead.

Broccoli, Kale and Pepper Soup

PREPARATION TIME            TOTAL TIME
10 MINUTES                  1 HOUR 10 MINUTES

INGREDIENTS

1 Tbsp. Ghee
2 medium broccoli’s chopped
6 kale leaves (stripped of stem)
2 tsp. ground pepper
1/2 tsp. salt
1 Leek (opt out for LOW FODMAP)
750ml Bone Broth or Stock
1 Bunch of Parsley

INSTRUCTIONS

1. Heat Ghee in soup pot
2. Add leek and sautรฉ until soft and opaque
3. Add Broccoli and Cook stirring around in leek and ghee for a few minutes
4. Add Kale and mix.
5. Sautรฉ on medium heat for 5-10 minutes until broccoli softens
6. Add Bone Broth or Stock
7. Simmer on low for 30 minutes
8. Add salt and pepper and parsley
9. Turn off heat and leave to cool slightly
10. Blend in blender or with stick mixer (you may or may not need to add more bone broth depending on desired consistency)
11. Cook for a further 10 minutes on low

Serve with a swirl of Coconut Kefir
